Winemaking: Grapes harvested at perfect ripeness before crushing and immediate yeast addition for fermentation. Moderate temperatures between 24-28°C and careful cap management during fermentation take place in a slow fermentation process, that ensures the extraction of fine tannins.
Tasting notes: Classic cool climate spice and black pepper, with lovely fresh plum fruit, complemented by flavours of vanilla and sweet spices coming from the oak aging. A beautiful mouthfeel, accompanied with fine and round tannins, make this a rich and complex wine.
Pairing: Smoky and spicy bbq pork ribs. Can be also enjoyed on its own.
