Tasting: Garnet color, limpid, deep. An initial truffled, smoky, leathery nose which then reveals notes of morello cherries. The palate has a nice acidity, notes of tobacco (havana) and spices (coriander seeds, black pepper). A silky and velvety mouth.
Pairing: Game, venison with cranberry sauce. Cheeses. Truffle dishes. For dessert, dark chocolate ganache with olive oil and salt.
Description: Manual harvest. Completely destemmed. Traditional vinification, with maceration of 3 to 4 days followed by alcoholic fermentation of 15 to 20 days in conical trunk vats. Native yeasts. Control of temperatures during vinification. Aged in casks for 12 to 14 months then matured in vats for 3 months before bottling. Aged in bottle for at least 1 year before sale.
