Description: Dom Pérignon is made with the Chardonnay and Pinot Noir varieties and is made only in large Champagne harvests and using best grapes. After a minimum of 8 years of aging in the winery, they reach the perfect balance.
2012 was a vintage in which particularly variable and difficult climatic conditions impacted the vineyard. Marked by episodes of frost, winter gave way to a spring of successive frosts, heavy rainfall, hailstorms and a sudden drop in temperatures during flowering. The hot and dry climate of the summer, especially in August, was optimal both for relieving sanitary pressure and for promoting the ripening of the fruit. The grapes harvested between September 10 and 26 revealed a perfect balance between tension, freshness and richness.
Despite the low yields, 2012 was a great vintage for champagne.
Tasting notes: "The 2000 Dom Pérignon is drinking beautifully, wafting from the glass with complex and gently reductive aromas of iodine, lemon oil, tangerine and oyster shell that have begun to develop appreciable tertiary nuance. On the palate, it's medium to full-bodied, deep and expansive, with a broad attack, incisive acids, a classy mousse and a long, precise and mouthwateringly saline finish. The year 2000 delivered a precocious Dom Pérignon, and this recently disgorged rendition has really benefited from the additional time sur lattes, acquiring notably more complexity--while retaining more energy--than the original disgorgement. Given its maturing profile I would plan to drink bottles within the next decade."
Pairing: The complex nose combines floral (white flowers) and fruity (apricot, plum) aromas with a beautiful minty freshness and subtle smoky notes, leading to a tasty minerality.
The precise and generous palate reveals a lively effervescence. Over the course of the tasting, the palate exudes aromas of ginger, tobacco and toast, leading to a tighter finish with good persistence.
