Description: Michel Girard, with sons Philippe and Benoit, produce outstanding wines from 50 acres of estate vines planted in all 3 of Sancerre's distinct soil types; silex, caillottes and terre blanches. For this special bottling, a selection of grapes of 15 year old vines from a single plot planted to silex soil (flint) were hand-harvested, gently pressed, fermented and aged in stainless steel tanks. Electric and pure.
Silex is like the premium cuvee (selection) of Sancerre wine of the Estate with a unique soil type found in Sancerre which includes deposit of flint and add a distinctive mineral character to the wine.
Lively wine with ripe citrus notes in the nose, followed by a full body. Pronounced minerality and a long finish.
Tasting notes: Produced in the typical flinty (silex) soil of parts of Sancerre, this wine has a crisp steely texture that is balanced by the ripe yellow fruit. The combination is both taut and ripe, giving good balance and tension.
Pairing: This wine will go wonderfully with lean fish dishes, such as veal, as well as soft cheeses.
